Memphis BBQ Vs NC BBQ

Interesting Excerpt from Silflay. Me? I've had North Carolina BBQ once, and that was when I was taking driver's ed. It was Stamey's. I didn't like it. I did go to Memphis a few years back for some ribs, and loved them!

Do they understand that barbecue is not beef or chicken? It's pig. Just pig. Okay, so people in Western North Carolina only use the shoulders and those in Eastern North Carolina like to make use of the whole beast, but it's still pig. I don't know what barbecue means in Memphis, but I'm guessing it's brisket or chicken or something. Who knows? It could be anything.

We don't put any funky red or brown sauce on it. The sauce is mostly vinegar and spices. The mix will vary depending on the establishment, but that's it mostly. Some people think barbecue is a lot like ketchup. I guess they're trying to hide the flavor of whatever it is they call Q

I found Stamey's to be nasty. Get the chopped from Bo-Hogs. That's some good BBQ.

What's cool is they have a drive-thru too.

I know, I know. I've driven by it on a couple of occasions but have either been broke or not hungry. Lately I've been on my country BBQ Chili Cheeseburger craving and have been slipping over there occasionally. The only thing that about country BBQ is they haven't got on the bandwagon to accept Credit/Debit cards. I guess they do such good business it doesn't matter, but I'm not a big cash person... I'll try Bo-hogs one of these days.
