Authentic Chile Rellenos Recipe

For all the Gringos out here Chile Rellenos is nothing more the stuffed peppers. Rellenos translated means filling, or stuffing. These are one of my favorite food and is great as a snack or a meal. This of course is a simple recipe using only cheese, but you can also add beef, or chicken as well as carna asada, and carnitas and tomatoes and onions into the cheese filling if you so choose.

When shopping for Chiles, look for a thick fleshed, straight Chiles large enough to hold the rellenos. Yes the Anaheim peppers used in this recipe were named for the city of Anaheim, California.

Ingredients

Quote:
6-8 California Green Chile's Also known as Anaheim chiles
2 LB Sharp Cheddar Cheese
4 Eggs
Flour
1/4 cup butter
Cooking Oil
Sour Cream

Directions

Quote:
1-Preheat Oil In Pan At High Temperature
2-Make vertical incision in peppers, de-seed and clean
2-Stuff with Cheese
3-Melt butter and mix eggs in with melted butter.
4-Dip stuffed peppers in butter and egg mixture and then in flour
5-Repeat step 4 until pepper is fully covered.
6-Place peppers in hot oil incision side down and cook till cheese melts.
7-Serve with sour cream on the side.
