My children claim I didn't come home the same person as I left. One of their biggest pieces of evidence to this hypothesis is the fact I now put french-fries on practically everything.

Of course it was explained to me abroad that during a period of starvation, drought, and war... scientist convinced Belgians that the potato was not "evil" as they had previously thought. It's now a staple of their diet. Indeed in America, we've villainized them as well, but are they really that bad? I spent four months eating frites and lost 50 lbs, lowered my cholesterol, and blood pressure.

Are frites, French fries, the answer to all the world's problems? I think so:

They provide 27g (half day's intake) of Vitamin C, they're rich in Vitamin B, Potassium and other minerals.

Contains Kukoamines to lower blood pressure, and Vitamins proven to reduce cardiovascular disease, and they're full of fiber.

So the next time you make dinner, toss some taters in there. I do. For the record, tacos with potatoes on them are AWESOME!
