Liv's Jalapeno Ass Kickers (Jalapeno Poppers) Recipe

While the timing of this recipe coincides with the Superbowl, it also supports Matt's personal belief that I starred in Star Wars as Jabba the hut. No these aren't healthy, not even close, but they are "Freaking awesome", and worth every pound you gain from them. While I'd love to take credit for them, as usual this recipe is 50% copying, 50% self-experimentation. In all honesty, there was a show on the food channel a few days where I tuned in at the end and caught a restaurant making these as their version of Jalapeno Poppers. Technically I'm not sure how close these are, but after just tasting the finished product, you'll be hard presses to find another Jalapeno Popper recipe that comes even close to this. For pure, excitement, I'll rename these Jalapeno Poppers, as Jalapeno Ass Kickers. So here's what you need:
Ingredients:
Jalapenos. (Duh)
Sharp Cheese, Shredded, (or your choice)
Creme Cheese
Sausage (Your choice)
Tooth Picks
Bacon
Directions:
Preheat Oven to 325F
1. Cut the tops of the Jalapeno Peppers
2. Using a knife, remove the innards being careful not to puncture the pepper.
3. In a bowl, combine 1/2 roll of sausage, and 1/2 bag of your favorite cheese.
(I used a whole log of sausage and a whole bag of cheese, and discovered I had a whole lot of leftovers)
4. Once meat and cheese is sufficiently mixed, stuff into Pepper carcasses leaving 1/4 of the total body empty.
5. wrap & toothpick the pepper in 1/2 length bacon strips. (Probably will go around atleast a couple times.)
6. Stick on pan. (I used a cup-cake pan, and stuck two in each hole)
7. Place in oven for about 15 minutes on the middle rack
8. Remove from oven, and fill the remainder of the peppers with creme cheese.
9. Place back in oven and cook for another 15-30 minutes.
10. Peppers are done when bacon is cooked, and creme cheese in browned on top.
Let it cool, and chow down.
